Ice Cream Sandwiches

Ever want to make ice cream sandwiches but you know the ice cream part won't last but a second in the summer sun? Then try making a literal ice cream sandwich cookie! I had a 4th of July party to go to and you know...my 'thing' is sandwich cookies (hard to tell with all the sugar cookies I do!) So naturally I wanted to do something in the sandwich cookie family but I didn't have a lot of time so I got creative and made chocolate-filled-vanilla-ice-cream-sandwich-cookies. They were the perfect mini sweet treat for an afternoon of heat!
To make these I simply cut out the mini cones from some sugar cookie dough (I always have dough rolled out in my freezer, makes life simpler). I under-baked them just slightly to make sure they are soft just like the filling. Then I made the below recipe for the chocolate filling. Once the filling is made, I roll it out between 2 sheets of crisco'd (this is now a word, lol) plastic wrap and then I cut it out with the same cutter I used to make the cookies...clever eh? That way you have perfectly matching cookies & cream! Then simply press your cream between you cookies and enjoy!
 
Chocolate Cream Filling: (modified from The King Arthur Flour Cookie Companion)
  • 3/4 tsp. gelatin
  • 1 tbsp. water
  • 1/4 cup shortening
  • 1/2 tsp. vanilla
  • 1 cup powdered sugar
  • 1/4 cup cocoa powder
In small bowl, soften gelatin with water and place in a larger bowl of hot water until fully dissolved.
In meantime, cream shortening and vanilla, then add in dry ingredients, cream together. Finally add in the gelatin and mix to combine.
